Salmon with Lemon Garlic Cream Sauce




Salmon in Lemon Garlic Cream Sauce 

      3 tbsp butter, 1 tbsp onion, 1-2 cloves garlic minced, ¼ cup white wine, 1 tbsp lemon, ¼ cup heavy cream, black pepper.

P   P/S : - Heavy Cream can be substituted with whipped cream.
-          
         Melt butter in small saucepan – medium high, add in onion & garlic until soft – 4mins.
- 
 c     When butter turns brown, turn down heat, add in white wine, lemon juice, stir until the level reduced by half.
-  
        Add in cream + pepper to sauce, reduce heat to low and stir.
-          
    For Salmon = Heat olive oil, medium high, season with bit salt & pepper / without as you like, skin face side up, 3 mins, flip another side 3-5mins, as skin are on, therefore it took a longer time. And finally when it's done, remove the skin and top it with sauce.

    And there it is ready to be served and enjoy your dinner!! 
Oh my, yummy! The potatoes are great too, with a glass of celery juice. 

Spinach Sauteed Mushroom Salmon




          Seared Salmon sauteed spinach mushroom
A bunch of baby spinach washed & dried, 1 -2 pcs of mushroom (sliced), 2 tomato (cut into cubes), 2-3 cloves of garlic (sliced), olive oil, pinch of black pepper + salt, balsamic vinegar 1 tbsp.    
    First put in the sliced garlic and fry it with olive oil, mix the mushroom – medium heat, add in salt to taste, stir for 4 mins, add in tomato & black pepper, 2-3mins, followed by spinach 1-2 min, stir well, add in balsamic vinegar + some lemon juice (i added a slice or two)
  Make sure that the spinach is cooked, and there you go. It's done in just a couple of minutes.
  
  And as for the salmon :
  Salmon fried seasoned with bit of salt & pepper, 4 mins on each side. Firstly, fried skin side down to get its crunchiness.
- Sprinkle parsley on salmon to serve.

 P/S :- Balsamic vinegar substitute – 1 tbsp apple cider + ½ tsp sugar = 1 tbsp balsamic vinegar

Herb Butter Salmon Recipe

Well, i made some salmon steak at home the past two days, and here i'm gonna share the recipe with the others, of all three different types of flavors for salmon steak.


Herb Butter Salmon (1 serving)
-    1 tbsp Tarragon, 1 tbsp Chives, 1 ½ tbsp Parsley, 1 tsbp Dijon Mustard, Butter ¼ cup, 1    tbsp of green   spring onion, ground black pepper, finely chopped red onions (shallots) x 1  pcs & garlic x 2 cloves.
-       Paste butter on the salmon and grill for 4-5 minutes.
n   Melt the butter, add and mixed well the herbs mentioned above including the mustard,  and other ingredients and mix well. After mixing, can apply it on the fish and leave it for about 30 minutes. 

     Next you could either grill the fish 180 - 200 degree celcius or pan fry it until its cooked , no oil is needed as there is already butter on it. Its best to not make it too dry, what i did was to pan fry it for roughly about 3-5 mins and i placed it in the oven for a little while more about 2-3mins before serving.

    This is a great and healthy dish, with omega 3 oils found in salmon and fatty acids which are good for the body & brain, i garnished the plate with some vegetables; asparagus too.

    For the asparagus, i apply some oil on it before placing it on the pan & then oven, very quickly i removed them, say for both total time of 2mins. As i do not want to burn up the good nutrients inside it with high heat. Therefore, i ate it half cooked and half raw, quite crunchy and it tasted good.


    This is the herb butter, though the appearance might not be too beautiful, but it tasted good with the herbs in it.

Update of Salmon Herb Butter : 
   I baked it instead of pan fry this time. I baked it for about 15 - 20 minutes with high heat of 200 degree celcius. I guess it taste better with baking, as the butter being absorbed into the fish itself. Also the colour turned out to be nicer, golden brown with the orangey colour of the fish. Delicious...... I'm still feeling hungry even after eating the whole plate.

Picture of the herbs butter paste on both my salmon fishes. Not easy to stick on it though. When i bake, the melted herb butter will absorb into the salmon fish. Hence, it gives the fish its taste.
